Creamy Coconut Milk Quinoa Pudding

Ingredients


3/4 cup Quinoa, uncooked (rinse)
1 cup Coconut milk, reduced fat (does not have to be reduced fat. Get unsweetened, can be Elmhurst, SoDelicious or the likeness.)
2 tbsp Maple syrup, pure
1 tsp Vanilla extract, pure
2 tbsp Strawberries

Instructions


  1. Bring coconut milk and quinoa in a small saucepan to boil over high heat.
  2. Reduce heat to medium-low, add in maple syrup and vanilla and continue to cook, stirring occasionally, for about 30 minutes until mixture is creamy and pudding light consistency.
  3. Place mixture in bowl in the refrigerator to cool down for 2 hours.
  4. Serve the pudding in a small dish.
  5. Garnish with a handful of fresh strawberry slices.
  6. Add some almond slices or chopped walnuts if desired.
  7. Allow time to cool or serve warm.

Notes:

Toppings

  • Use any garnish you desire - bananas, strawberries, apples
  • Use - coconut whip cream
