Creamy Low-Fat Macaroni & Cheese

1 tsp Apple cider vinegar
1/2 tsp Brown mustard
8 medium Carrots (chopped)
1 bag (12oz) Frozen vegetable mix
1/2 tsp Garlic powder
2 tbsp Lemon juice
2 tbsp Nutritional yeast
1/4 cup Nutritional yeast
1/2 tsp Onion powder
1 cup Pasta, macaroni, elbow, whole wheat, dry
1 tsp Salt
1 dash Turmeric, ground
1/2 cup Water (for boiling potato)
3 potato Yukon Gold potato (chopped)


Wash and scrub both potatoes and carrots. Peel if desired and chop into uniform pieces and boil for 10 minutes. Let rest for 5 minutes.

With slotted spoon, transfer veggies to blender. Add ½ cup potato water. Pulse to mix.

Add in remaining ingredients and blend until smooth.

Boil pasta until al dente.

Add in frozen vegetables to last 5 min of boiling.

Drain and stir in enough cheese sauce until creamy and coated.
