Creamy Greek Tzatziki

This flavorful Greek condiment is great for dipping raw veggies, chicken skewers, or falafel and can also be used as a dressing on sandwiches and salad bowls!

Ingredients


1 cup Cucumber (shredded)
1 1/2 tsp Salt
2 cup Greek yogurt, plain, fat-free
3 tsp Garlic (fresh; minced)
3 tsp Dill, fresh
3 tsp Lemon juice (freshly squeezed)
2 tbsp Olive Oil, Extra Virgin
1/4 tsp Black pepper (Fresh ground)

Instructions


  1. Shred the cucumber and place it in a mesh strainer. Sprinkle the cucumber with salt and toss. Set aside to allow the salt to pull out the excess water in the cucumber; this keeps the tzatziki from becoming too watery.
  2. Mix yogurt, garlic and dill, lemon juice, and olive oil in a small-medium sized bowl.
  3. Press the liquid out of the cucumbers and then add to yogurt mixture.
  4. Add pepper to taste and enjoy!
