Ingredients


1/2 kg Potato (baby/mini potatoes)
2 avocado(s) Avocado (cubed)
1 cup chopped Yellow bell pepper
1/2 cup diced Celery
1/2 small Red onion (sliced)
1/2 tsp Sea salt, fine (or to taste)
1/4 tsp Black pepper (or to taste)
1 tbsp Extra virgin olive oil
1 tsp Dill, dried

Instructions


  1. Boil potatoes until tender, cool in the fridge while preparing the other ingredients
  2. In a large mixing bowl, add the remaining ingredients and toss
  3. When potatoes are chilled add to the mixture and toss so that the potatoes are covered
  4. Serve and enjoy
