Creamy Skillet Chicken and Mushroom

1/2 cup Asiago cheese, President's Choice
1/2 tsp Black pepper
8 thigh(s) Chicken thighs, boneless, skinless (boneless)
1/2 cup Coffee (table) cream 18% M.F.
454 gm Cremini (Italian) mushroom (sliced)
2 tbsp Dijon mustard
1 clove(s) Garlic (chopped)
2 tbsp Margarine, non-hydrogenated
2 tbsp Olive oil
1/2 tsp Salt
1 tbsp Thyme, fresh (chopped)
1/2 cup All-purpose white flour
1 1/2 cup White wine (or chicken broth)


Melt margarin and olive oil in a skillet over medium-high heat. 

Season flour with salt and pepper. Dredge chicken in seasoned flour and cook in until golden brown, about 5 minutes on each side. Remove from pan and set aside. 

Reduce heat to medium and add garlic and mushrooms. Sauté until garlic is fragrant and mushrooms release their moisture. 

Add white wine to deglaze - scrape up all the bits on the bottom of the pan. Add thyme. 

Add chicken thighs back to pan and let simmer for 15-20 minutes. Remove chicken again and add cream, asiago, dijon and salt and pepper to taste. 

Add chicken back to pan to mix with sauce and reheat. Serve warm.
