2 cup Quick oats
4 cup Almond milk, vanilla, unsweetened, Silk
1/2 cup Pumpkin, canned (pure, not pie filling)
2 tsp Pumpkin pie spice
1 tbsp Brown sugar (firmly packed light)

Instructions


  1. In a food processor or blender, process the oats for 45 seconds, or until it resembles flour. 
  2. In a medium saucepan over medium-high heat, bring the almond milk, pumpkin, and pumpkin pie spice to a boil, stirring frequently until smooth. 
  3. Stir in the processed oats and brown sugar. Reduce the heat to medium and cook, uncovered, for 1 to 2 minutes, or until thickened, stirring frequently.
  4. To serve, spoon into bowls. You may add a small amount of hot water if you prefer a smoother, thinner consistency.

Notes:

Quick Tip:

  • No pumpkin spice? Make your own: stir together 1 tablespoon plus 1 teaspoon ground cinnamon, 2 teaspoons ground ginger, 1 teaspoon ground cloves, and 1/2 teaspoon ground nutmeg until well blended. 

Texture Modification:

  • Pureed: If the oatmeal is lumpy, process in a food processor or blender until smooth. Make sure there is no separation of liquid.
