1 medium Yellow onion (chopped)
1 large stalk(s) Celery (chopped)
1 medium Carrots (chopped)
2 clove(s) Garlic (chopped)
3 can (28oz) Tomatoes, canned, stewed
2 cup Water (hot)
1/2 tsp Salt
1 tbsp Honey
1/2 tsp Mediterranean herb seasoning
1 cup Cashew nuts, raw
1 cup Water (cold)


Saute vegetables, garlic and oil until onion is clear

Add all remaining ingredients (except cashew nuts and cold water). Bring to boil from simmer for 20mins to let the flavours mingle

Blend well with stick blender

Make cashew cream with cashews, water and stick blender and stir in
