Creamy Trout Salad

This healthy salad is loaded with all the anti-inflammatory omega3's with detoxifying herbs and veggies. Delicious, filling and nutrient dense.

Ingredients


400 gm Lettuce, romaine (heart, chopped)
1/2 bunch Parsley, Italian, fresh (chopped)
150 gm Cucumber
100 gm Celery
600 gm Trout, rainbow (cooked)
3 tbsp Extra virgin olive oil
3 tbsp Tahini
1 tbsp Orange peel (zest)
2 anchovy Anchovy, canned in olive oil, drained (chopped)
1 tbsp Apple cider vinegar
1 clove(s) Garlic (crushed)
1 tsp Salt and pepper
4 tbsp hulled Hemp seeds, shelled

Instructions


Build the Salad:

  1. To a bowl add chopped romaine heart, parsley, cucumber, celery and flaked fish. Mix together to break up a little.

 

To make the Dressing:

  1. In a small bowl whisk together olive oil, tahini, apple cider vinegar, orange zest, chopped anchovies, crushed garlic and black pepper. 
  2. Drizzle dressing over the salad & top with hemp seeds
  3. Enjoy!
