Ingredients


1 tsp Olive Oil, Extra Virgin
1/4 cup White onion (chopped)
2 tbsp minced Ginger root
1 tbsp Garlic (minced)
1/2 tsp Turmeric, powder
1/4 tsp Cayenne pepper (powder)
1/2 tsp Salt
1/2 tsp Black pepper
1/2 cup Red lentils, raw (dried, and rinsed)
2 cup Vegetable stock/broth, low sodium
2 cup Water, filtered
3/4 cup Greek yogurt, plain, fat-free

Instructions


  1. In a pot, saute onion, ginger and garlic in olive oil.
  2. Add turmeric, cayenne, salt and black pepper. 
  3. Stir in lentils, roasted vegetables, vegetable stock and water. Simmer for 20 minutes or until lentils are soft.
  4. Puree until smooth using blender and stir in Greek yogurt.
