Crisp and Creamy Low FODMAP Chicken Salad

Ingredients


8 tbsp Cranberries, dried
400 gm Chicken, cooked (leftovers or store-bought; shredded)
40 gm Red grape (or green grapes, quartered; about 2 grapes per serving; optional)
4 tbsp Celery (finely diced)
1 cup chopped Cucumber, peeled
2 tbsp Parsley, fresh (finely sliced)
4 tbsp Green onion (green leaves only; finely sliced)
1/2 tsp, leaves Tarragon, dried (or 1 tbsp fresh)
1/2 cup Mayonnaise
2 tbsp Lemon juice (fresh)
2 tsp Dijon mustard, gluten free
1 dash Salt and pepper (fresh, to taste)

Instructions


  1. Place the dried cranberries in a bowl and cover in boiling water. Set aside and allow to soak.
  2. Shred the cooked chicken into small pieces and prepare your vegetables.
  3. Drain the cranberries.
  4. Add the cranberries, grapes, celery, cucumber, parsley, green onion, and chicken to a large bowl and toss to combine.
  5. In a small bowl, stir together the tarragon, mayonnaise, lemon juice, Dijon mustard, and a few grinds of salt and pepper to make the dressing.
  6. Pour the dressing over the salad ingredients and toss until coated. 
  7. Chill the salad in the fridge until ready to serve.
