Crispy Pork Bites With Blue Cheese Sauce

700 gm Waitrose Pork Belly Slices (belly strips)
1 tsp Himalayan salt
1 tbsp Ghee
60 gm Yellow onion (diced)
60 gm Blue cheese (gorgonzola)
90 ml Heavy cream, 38% M.F.
1 tsp Sesame seeds ((optional))
1 tsp Salt and pepper (season to your taste)
400 gm Lettuce, romaine

Instructions


  1. Preheat the oven to 200 °C (395°F)

  2. Rub the salt into the pork belly strips and place in an ovenproof dish.

  3. Cook for 30-45 mins depending on thickness of strips, until a crispy golden colour

  4. Melt the butter in a pan and sauté the onions slowly until caramelised

  5. Add the cream to the onions and warm through then break the blue cheese into the pan and stir until melted

  6. Continue cooking for a couple more minutes then pour into a serving dish

  7. Cut the pork strips into bite sized pieces and serve with the blue cheese dressing and romaine lettuce leaves
