700 gm | Waitrose Pork Belly Slices (belly strips) |
1 tsp | Himalayan salt |
1 tbsp | Ghee |
60 gm | Yellow onion (diced) |
60 gm | Blue cheese (gorgonzola) |
90 ml | Heavy cream, 38% M.F. |
1 tsp | Sesame seeds ((optional)) |
1 tsp | Salt and pepper (season to your taste) |
400 gm | Lettuce, romaine |
Preheat the oven to 200 °C (395°F)
Rub the salt into the pork belly strips and place in an ovenproof dish.
Cook for 30-45 mins depending on thickness of strips, until a crispy golden colour
Melt the butter in a pan and sauté the onions slowly until caramelised
Add the cream to the onions and warm through then break the blue cheese into the pan and stir until melted
Continue cooking for a couple more minutes then pour into a serving dish
Cut the pork strips into bite sized pieces and serve with the blue cheese dressing and romaine lettuce leaves
