1 large Banana (sliced, for topping)
1/3 tsp Cardamom, ground
7 medium Carrots (grated)
1 tsp Cinnamon
1 can (13.5oz) Coconut milk, reduced fat
2 tbsp Coconut oil
8 date(s) Dates (pitted, chopped)
2 tsp Ginger, dried
1/4 cup Maple syrup
1 cup Rolled oats- Gluten Free (or variety of choice)
1/2 tsp Salt
1 tbsp Vanilla extract, pure
2 1/2 cup Water


Put everything but the vanilla, maple syrup, and toppings in a crock pot. Cook on low for 8 hours.

Add the honey and vanilla, as well as some sliced bananas.

Serve and enjoy!
