Instructions
- Brown the beef in a saute pan over medium heat, once browned remove the beef from the pot and drain it on a plate lined with paper towels.
- Add the beef, pepper, onion, Rotel, beef stock, garlic powder, salt, and pepper to the crock pot and stir well. Turn on low for 4 hours.
- Once cooked, add in the cream cheese and stir until cream cheese is well combined. Add in the cheddar cheese and stir.
- Pour into serving bowls and top with more cheddar cheese, sour cream, and scallions.
