Crockpot Cheeseburger Soup with Bacon

Crockpot cheeseburger soup is a delicious and comforting meal that combines the flavors of a classic cheeseburger with the warmth of cheese.

Ingredients


454 gm Ground turkey, lean
12 medium slice Bacon (cooked crispy and chopped)
1 large White onion (chopped)
1 cup Carrots (chopped)
1 cup Celery (chopped)
1 1/2 tsp Basil, dried
1 1/2 tsp Parsley, dried
4 cup Chicken broth (stock)
4 cup Yukon Gold potato (peeled and cubed)
3/4 tsp Salt
1/2 tsp Black pepper
2 cup Cheddar cheese (shredded)
1 cup Cheddar cheese (sharp; shredded)
1/2 cup Sour cream, 14% M.F. (regular kind)
1 cup Almond milk, unsweetened (or your choice milk)
1 tbsp Xantham Gum (or cornstarch)
1 small pickle(s) Dill pickles (optional for topping)

Instructions


  1. Brown the ground beef in a large skillet on the stovetop over high heat. Add in the chopped onion and brown and crumble the beef.
  2. Drain any excess grease. Add the onion and beef to a 6-quart crockpot.
  3. Cook the bacon on medium-high heat until crispy and set aside to crumble when cool.
  4. Chop the onion, celery, and carrots peel and dice 4 gold potatoes, 
  5. Transfer the chopped vegetables to the crockpot as well as half of the crumbled bacon.
  6. Sprinkle the dried basil, dried parsley, salt, and pepper onto the ingredients in the crockpot. 
  7. Pour in 4 cups of the chicken broth.
  8. Cover and cook on LOW for 6 to 8 hours or HIGH for 4 to 5 hours, or until the potatoes can be cut through with a fork.
  9. With one hour remaining, combine the milk and cornstarch together to create a slurry and stir it into the slow cooker.  
  10. Stir in the shredded cheese, cover, and COOK for 1 hour.
  11. Serve with scallions, sour cream, extra cheese, dill pickles, and crumbled bacon.
