Crockpot Cool Ranch Shredded Chicken Tacos

Ingredients


908 gm Chicken breast, boneless, skinless
1/2 cup Chicken broth (stock), low sodium
1 package Taco seasoning mix, McCormick
2 tbsp Ranch seasoning, dry, McCormick
12 medium tortilla(s) Tortilla, corn
1 bag (16oz) Coleslaw mix (optional)

Instructions


  1. Put chicken breasts, taco & ranch mixes, and chicken broth in the crockpot.
  2. Set crockpot on low for 5 hours.
  3. After 5 hours, shred chicken with 2 forks.
  4. Replace lid and continue cooking on low for 30 more minutes.
  5. Serve shredded chicken with warmed corn tortillas topped with coleslaw mix if using. Freeze leftovers if desired, thaw and reheat for a quick evening meal!

Notes:

  • Choose your favourite toppings for tacos like shredded lettuce, tomatoes and cheese
  • Make a taco bowl: serve with lettuce, corn chips, corn, black beans (drained and rinsed), cucumbers, tomatoes, green onions, salsa and sour cream or greek yogurt.
