These Crustless Jalapeño Mini Quiches are the perfect bite-sized holiday appetizer to serve at your next gathering!
Ingredients
3 spray (about 1/3 second)
Olive oil cooking spray
(for greasing the pan)
1/2 cup
Broccoli, raw
(chopped)
1/2 cup
Red bell pepper
(chopped)
1/4 cup
Jalapeno pepper
(deseeded, chopped)
1/2 cup
Red onion
(chopped)
6 large
Egg
2 tbsp
Partly skimmed milk, 2% M.F.
(or milk of choice)
1/2 tsp
Salt
1/4 tsp
Black pepper
1/4 cup, shredded
Cheddar cheese
(or cheese of choice)
Instructions
Preheat oven to 350F (177C) and grease mini muffin pan with olive oil spray.
Prepare all veggies by chopping as small as possible and add to a large mixing bowl.
Whisk the eggs with milk, salt, and pepper. Then add the egg mixture to the large mixing bowl with the veggies. Add the shredded cheese and stir to combine all ingredients.
Carefully pour the veggie and egg mixture into the mini muffin cups, filling a couple of millimetres from the top.
Bake in the oven for 25 minutes.
Let cool and serve on a large serving platter.

Tip
Don't like the spice? Omit the jalapeno and add herbs of your choice for additional flavor!
