Instructions
- Mash the garlic, salt, and black pepper into a paste in a medium bowl.
- Add freshly squeezed lime juice, lemon juice, orange juice, grapefruit juice, and vinegar to garlic paste.
- Add the diced onion and oregano to the bowl with the marinade mixture.
- Stir to combine.
- Set aside half of the marinade for topping the salmon.
- Add salmon fillets to the remaining marinade, evenly coating.
- Cover and let marinate for at least 30 minutes.
- Heat a skillet over medium-high heat.
- Once hot, add the fish, skin side down, and sear for 3-4 minutes.
- Flip and cook until your desired doneness, or until the salmon flakes easily.
- Remove the skin.
- Top with remaining marinade and cilantro.
- Serve with lime wedges.
