Cuban Citrus Garlic Salmon

Ingredients


8 clove(s) Garlic (peeled and minced)
1 tsp Salt
1/2 tsp Black pepper
1 whole lime(s) Lime juice (fresh)
1 whole lemon(s) Lemon juice
1 medium Orange (juice, freshly squeezed)
1/2 grapefruit Grapefruit (pink or red) (juice, freshly squeezed)
1 tsp Vinegar, white
1/2 medium Yellow onion (finly diced)
1 tsp Oregano, fresh
4 fillet Pacific salmon, fillets, raw
4 sprig Cilantro (coriander) (for topping; optional)
1 fruit Lime (cut into wedges; for serving; optional)

Instructions


  1. Mash the garlic, salt, and black pepper into a paste in a medium bowl.
  2. Add freshly squeezed lime juice, lemon juice, orange juice, grapefruit juice, and vinegar to garlic paste.
  3. Add the diced onion and oregano to the bowl with the marinade mixture. 
  4. Stir to combine.
  5. Set aside half of the marinade for topping the salmon.
  6. Add salmon fillets to the remaining marinade, evenly coating. 
  7. Cover and let marinate for at least 30 minutes.
  8. Heat a skillet over medium-high heat. 
  9. Once hot, add the fish, skin side down, and sear for 3-4 minutes. 
  10. Flip and cook until your desired doneness, or until the salmon flakes easily. 
  11. Remove the skin.
  12. Top with remaining marinade and cilantro. 
  13. Serve with lime wedges.
