1. Peel cucumber, cut lengthwise and then slice into 1/2-inch pieces.
2. Zest the lime and juice half.
3. Coarsely chop the cilantro.
4. In a large bowl, toss together the cucumber, pumpkin seeds, lime zest, lime juice, 1 tablespoon of olive oil and the cilantro.
5. Season with salt and pepper to taste.
