|2 cucumber(s)||Cucumber (chopped)|
|1/2 small||Red onion (thinly sliced)|
|2 tbsp||Parsley, fresh (chopped)|
|2 tbsp||Mint, fresh (chopped)|
|2 tbsp||Apple cider vinegar|
|3 tbsp||Extra virgin olive oil|
|1 pinch||Sea salt (to taste)|
1. Chop the cucumber, red onion, parsley and mint and place all of the ingredients into a bowl.
2. Add the apple cider vinegar, olive oil and sea salt into the bowl and toss the ingredients gently to combine.
3. Refrigerate with dressing separated. Toss before serving.
This salad makes a great side salad, but if you wanted to make it a meal salad add some protein such as chicken, tofu or chickpeas along with 4 cups of mixed lettuces.
