A delicious cucumber salad with fresh mint.


2 cucumber(s) Cucumber (chopped)
1/2 small Red onion (thinly sliced)
2 tbsp Parsley, fresh (chopped)
2 tbsp Mint, fresh (chopped)
2 tbsp Apple cider vinegar
3 tbsp Extra virgin olive oil
1 pinch Sea Salt (to taste)


  1. Chop the cucumber, red onion, parsley, and mint, and place all of the ingredients into a bowl. 
  2. Add the apple cider vinegar, olive oil and sea salt into the bowl and toss the ingredients gently to combine.
  3. Refrigerate with dressing separated. Toss before serving.


Quick Tip

  • This salad makes a great side salad, but if you wanted to make it a meal salad, add some protein such as chicken, tofu, or chickpeas along with 4 cups of mixed lettuce greens.
