Chop the cucumber, red onion, parsley, and mint, and place all of the ingredients into a bowl.
Add the apple cider vinegar, olive oil and sea salt into the bowl and toss the ingredients gently to combine.
Refrigerate with dressing separated. Toss before serving.

Quick Tip
This salad makes a great side salad, but if you wanted to make it a meal salad, add some protein such as chicken, tofu, or chickpeas along with 4 cups of mixed lettuce greens.
