Curried Chicken Salad on Endive

1 medium Apple (green)
3 cup shredded Chicken breast, roasted
1/4 cup Coconut cream (gotten by skiming the fat from the top of a can of whole fat coconut milk, or 1/4 cup facto-fermented mayo)
1 tbsp Lemon juice (or raw cider vinegar)
2 tsp Curry powder
2 bunch Green onion, scallion, ramp (minced)
1 medium pepper(s) Red bell pepper (diced)
1 tsp Salt
1 tsp Black pepper
2 endive(s) Belgian endive (separated into individual leaves)


In a bowl, combine first 8 ingredients. Serve on top of endive leaves or chop endive and toss together to make a salad.
