Curried Egg Salad [BF]

Eggs are a great source of protein and contain some important B vitamins!


4 medium egg Egg, hard boiled (peeled & chopped fine*)
1 tbsp chopped Carrots (minced)
1 tbsp Green onion, scallion, ramp (minced)
2 tbsp Mayonnaise (home-made)
1 tsp Curry powder (without garlic or onion)
1/2 tsp Sea salt
1 dash Black pepper (freshly ground; to taste)


1. Hard-Boiled Egg:

  • Cover the eggs in a saucepan with water about 1 inch above the eggs
  • Heat water to a rolling boil
  • Turn off the heat, keeping the pan on the hot burner for 10-12 minutes
  • Strain water from the saucepan and run cold water over the eggs
  • Prepare as desired - for this recipe you can cut into small chunks

 2. Combine chopped hard-boiled eggs, carrot, green onion tops, mayonnaise, curry powder, and sea salt. 

3. Add freshly ground pepper to taste.  Stir well.
