DA - Cilantro Lime Chicken

Ingredients


454 gm Chicken breast, boneless, skinless (organic)
1 tbsp Extra virgin olive oil
1 fruit Lime (juice and zest)
2 tbsp Cilantro (coriander) (fresh, coarsely chopped)
1/2 medium pepper(s) Jalapeno pepper (coarsely chopped, optional)
1 clove(s) Garlic (coarsely chopped)
1 dash Salt and pepper (to taste)

Instructions


1. Puree the oil, lime juice and zest, cilantro, jalapeno and garlic in a food processor until smooth. 

 

2. Place the chicken on foil on a baking sheet, pat dry, and season with salt and pepper. 

 

3. Spread the cilantro and lime mixture and bake in a preheated 400F oven (or on the grill) until the internal temperature reads 165F (about 25-35 minutes)
