1 small squash | Butternut squash (seeded and cubed) |
2 tbsp | Extra virgin olive oil |
1 pinch | Himalayan salt (to taste) |
1 dash | Black pepper (to taste) |
1. Preheat oven to 400 degrees F.
2. Toss squash with olive oil and spread on a baking sheet, making sure none of the cubes are touching each other.
3. Season with salt and pepper.
4. Roast until lightly browned (about 25-30minutes).
