1 cup Lentil medley, raw
3 cup Water (boiling)
1 medium Yellow onion (finely chopped)
1 eggplant Eggplant (diced into 1cm pieces)
1 large stalk(s) Celery (diced)
2 cup pieces White mushrooms (chopped)
1 tbsp Ginger paste
4 clove(s) Garlic (finely chopped)
2 tsp Salt
2 tbsp Vegetable oil
2 tbsp Honey
1 can(s) (14oz) Diced tomatoes, canned
1 small pepper(s) Green bell pepper (finely diced)
1 cup Frozen green peas


Cook lentils in boiling water for about 12mins

In a large pot or frying pan, saute onions, oil, garlic, ginger, celery, eggplant and mushrooms until they are soft

Combine all the other ingredients, stir and bring to a boil. Turn down the heat and simmer for about 5mins to let the flavours mingle.
