Daily Beet Smoothie

Ingredients


1/4 cup Beets, raw (pureed)
1 cup Skyr plain yogurt (Substitute kefir or dairy free alternative)
1/2 cup Cashew milk, unsweetened
2 tbsp Almond butter, salted
2 tbsp Chia seeds, ground
1 tsp Apple cider vinegar
2 tbsp Whey protein powder, isolate, chocolate (or collagen protein)
1 tbsp Matcha, green tea powder (optional)
1 cup Frozen spinach

Instructions


  1. To make the beet puree: peel and slice 2lbs of beets, add to a pressure cooker with 4oz of water, and cook on high for 5 minutes. Alternatively, cook in a covered pot until tender. Blend in a high-speed blender until smooth. 
  2. Place all ingredients except spinach in a blender and blend on low until smooth (30 seconds). 
  3. Add frozen spinach and blend starting on low and working your way up to high (1 minute). 
  4. Serve and enjoy!
