|1/2 cup||Coconut oil|
|2 medium egg||Egg|
|1 tsp||Vanilla extract, pure|
|1 cup||Spelt flour|
|1 cup||Steel cut oats, dry|
|1/2 cup chopped||Dandelion greens (dandelion flowers only, washed )|
Preheat oven to 375°F.
Blend oil and honey and beat in the two eggs and vanilla.
Stir in flour, oatmeal and dandelion flowers.
Drop the batter by teaspoonfuls onto a lightly oiled cookie sheet and bake for 10-15 minutes.
