|2 cup||Apple cider vinegar|
|1 cup chopped||Dandelion greens (greens and flowers)|
Add fresh, chopped dandelions to a clean glass jar (with a plastic lid)
Put enough flowers into the jar to fill up about 3/4 of the way to the top. Add the vinegar and fill to the top. Poke any air bubbles with a chopstick.
Cover and store in a cool place for a month. Shake every day if possible to move plant material around.
Strain out plant material after a month. Use a funnel to move the infused vinegar to a sterilized glass bottle with a plastic lid. Store away from direct sunlight.
Use in your favourite salads and stews!
