|1 cup||Medjool date (Pitted)|
|1/2 cup||Rolled oats- Gluten Free|
|3 tbsp||Almond butter|
|1 tbsp||Flaxseeds (or chia seeds)|
|1/4 cup||Cocoa powder, unsweetened|
|2 tbsp||Dark chocolate chips, vegan|
|1/3 cup||Coconut, shredded, unsweetened|
1. Place pitted medjool dates into a food processor or high speed blender. Blend until dates are ground and clump into a sticky ball.
2. Add in oats, nut butter, flax or chia seeds, and cocoa powder. Blend until all ingredients are completely combined. Add chocolate chips and pulse to distribute.
3. Roll mixture into 1'' balls with your hands, then roll in unsweetened coconut flakes. Repeat until all the balls are rolled. You should get between 12-14 energy balls from this recipe.
4..Refrigerate for up to 5 days or freeze for longer life!
