1 bunch Kale
2 tbsp hulled Sunflower seeds
2 tbsp Pumpkin seeds (pepitas)
2 tbsp Nutritional yeast (optional)
2 clove(s) Garlic (dressing - large, minced)
1/2 cup Tahini (dressing)
3/4 cup Water, filtered (dressing)
1 whole lemon(s) Lemon juice (dressing)
1/2 tsp Dijon mustard (dressing)
1/2 tsp Salt (dressing)
1 dash Black pepper (dressing - freshly ground)


Thoroughly rinse and dry kale.

Tear into bite-sized pieces and place in large bowl.

Toss all dressing ingredients in blender or food processor and blend until well combined. Alternatively, add all dressing ingredients to a mason jar and shake like a polaroid picture.

Massage half of the dressing into the kale. Add more or less dressing to suit your tastes.

Top with sunflower and pumpkin seeds and a sprinkle of cheese nutritional yeast.
