2 tbsp Black beans, canned
2 tbsp Sweet corn, canned, drained
2 tbsp shredded Cheddar cheese
2 tbsp Salsa, ready-to-serve
2 tbsp Sour cream, light
10 chip Tortilla chips, plain, white corn, salted (or leftover rice)
1/2 cup Red grape (or green)

Instructions


  1. Place all ingredients in separate containers in a divided lunch box or separate with silicone muffin liners.
  2. Pack the lunch box in an insulated lunch bag with an ice pack to keep it cool for food safety.
