Ingredients


275 gm Tortilla chips (approximately 1 bag)
1 1/2 cup Chicken, cooked (store bought rotissarie - shredded or protein of choice)
1 1/2 cup Mexican cheese blend (or low lactose cheese)
1 cup Pineapple, canned (drained) (tidbits)
1 large pepper(s) Green bell pepper (diced)
1 cup chopped Tomato
1 1/2 cup shredded or chopped Iceberg lettuce
1/4 bunch Cilantro (coriander) (fresh chopped)
1/2 bunch Green onion (sliced)
1/4 cup Olives (sliced)
1/4 cup slices Jalapeno peppers, sliced, canned (sliced or banana peppers)
1/2 can (15oz) Refried beans, canned, traditional style
1 cup Guacamole (or diced avocado)
1 cup Salsa, ready-to-serve
1 cup Sour cream, light

Instructions


  1. Preheat oven to 325 degrees F. Line a baking sheet with tin foil.
  2. Spread half of the tortilla chips on a rimmed baking sheet, and sprinkle over half of the cheese. Then layer on the rest of the chips and cover with the remaining cheese.
  3. Place desired toppings in individual bowls and arrange on the dinner table around a tea towel - this is what the baking sheet containing the nachos will be placed on when it comes out of the oven. Set out small serving plates for each person.
  4. When ready to serve, bake the nachos for about 8 minutes until the cheese is melted. Transfer the baking sheet with the nachos to the dinner table on top of the tea towel.
  5. Each person can grab their desired amount of nacho chips and dress as desired on their plate, or dress each nacho chip individually with different topping and condiment combinations.
