1 tsp Olive Oil, Extra Virgin
500 gm Beef, bottom round, lean (cut into chunks)
1 medium Yellow onion (sliced)
1 clove(s) Garlic
1/2 tsp, ground Thyme, dried
1/2 tsp Black pepper
2 cup Button mushrooms (small, whole)
1 small Turnip (about 1 lb; peeled and cut in 1-inch cubes)
2 medium Carrots (peeled and cut into coins)
1 cup Beef broth (stock), low-sodium (or no salt added)
1 cup Water (cold)
4 tsp Cornstarch (alternative thickeners: arrowroot or barley flour)
1 medium potato Sweet potato (cut into 1-inch cubes)
2 potato Potato (medium; peeled and cut into 1-inch cubes)

Instructions


  1. Preheat oven to 350º F (180º C).
  2. In a large oven-safe pot, warm oil over medium heat. Add beef and brown for about 10 minutes. 
  3. Add onion, garlic, thyme, black pepper, and mushrooms. Cook until the onions are soft, about 10 minutes. 
  4. Add beef stock, turnip, and carrots, and bring to a boil. Cover and place in the preheated oven for 30 minutes.
  5. In a small bowl, mix cold water and cornstarch. 
  6. Remove stew from the oven and stir in cornstarch mixture, sweet potato, and potatoes. Cover and return to the oven for another 30 minutes.
  7. Remove the lid and cook for an additional 15 minutes.
