2 tbsp Canola oil
1 cup White onion (finely chopped)
2 clove(s) Garlic (minced)
2 tbsp minced Ginger root (finley grated)
1/2 tsp Cumin
1/2 tsp Coriander, ground
3/4 tsp Turmeric, ground
1/2 tsp Cardamom, ground
3 clove Cloves
1 stick(s) Cinnamon
1 1/3 cup Basmati rice, dry (well rinsed)
454 gm Chicken breast, boneless, skinless (cut into strips)
1/3 cup Greek yogurt, plain, fat-free
2 large Tomato (diced)
3 cup Chicken broth (stock), low sodium
4 sprig Cilantro (coriander) (for garnish)


In saucepan, heat canola oil over medium-high heat and sauté onion, garlic, ginger, cumin, coriander, turmeric, cardamom, cloves and cinnamon for 2 minutes to bring out flavours.

Stirring constantly, add rice, chicken, yogurt, tomato and broth; cover and simmer over medium heat for 15 minutes or until rice is tender, chicken is cooked through and liquid is absorbed. Remove from stove and let stand for 5 minutes.

Garnish with cilantro and serve.
