4 cup Gluten free flour
6 1/4 tsp Baking powder, gluten-free
1 tsp Baking soda
1 tsp Salt
1/8 cup Lemon juice (or apple cider vinegar)
2 cup Almond milk, unsweetened (or any plant milk)
3 tbsp Coconut oil

Instructions


  1. Preheat oven to 425°F. Mix lemon juice with almond milk.
  2. Add all dry ingredients to a bowl. Mix well.
  3. Combine milk mixture and oil.
  4. Add wet ingredients to dry ingredients and stir until just mixed and then beat another 10 strokes.
  5. Drop them onto a lined baking sheet 1 inch apart.
  6. Bake for 12 - 15 minutes until lightly-browned.
