Try this Easy Chopped Salad with with bok choy, snow peas, carrots, and sunflower seeds with a soy sesame dressing!
Ingredients
4 cup
Baby bok choy
(shredded)
1 cup grated
Carrots
1 cup
Snow peas, raw
(slivered)
1/2 cup
Green onion
(chopped)
1/2 cup
Sunflower seeds
(raw, unsalted)
1/4 cup
Cranberries, dried
(or to taste, or omit)
1/2 cup
Olive Oil, Extra Virgin
1 1/2 tbsp
Coconut aminos, Coconut Secret
(or use soy sauce)
1 1/2 tbsp
Rice vinegar
1 tsp
Sesame oil
1/2 tsp
Coconut sugar
(or use any sugar or sweetener to taste)
1 clove(s)
Garlic
(crushed)
1/2 tsp
Ginger root
Instructions
Place all the salad ingredients into a bowl. Whisk all dressing ingredients, and pour over. Meal prep: chop all veggies and store in an airtight container. Whisk dressing and store in a jar in the fridge until ready to use.
