EASY Glazed Cod with Asparagus and Mushrooms

1 cup Brown rice, long-grain, dry (organic)
1/4 cup Hoisin sauce, gluten free
454 gm Atlantic Cod (wild, skinned)
454 gm Asparagus (trimmed and cut in half crosswise)
114 gm Shiitake mushrooms, raw (stems removed)
2 tbsp Extra virgin olive oil
1 pinch Sea Salt (to taste)
1 dash Black pepper (to taste)

Instructions


Cook rice per the package directions. Pre-heat broiler.

Mix hoisin sauce and 1 tablespoon water in a small bowl. Place fish, skin-side down, on a foil-lined baking pan and spread sauce over the top.

Toss asparagus, mushrooms, oil, and ¼ teaspoon each sea salt and pepper in a medium bowl. Spread vegetables evenly around fish.

Broil on middle rack, stirring vegetables once, until they are tender and fish is cooked through and opaque, 6 to 8 minutes, depending on thickness.

Divide fish among individual plates. Serve with vegetables and rice.
