Ingredients


454 gm Ground turkey, lean (lb Ground)
1 tsp Avocado oil (tsp; (or any oil of choice))
1 cup Black beans, canned
1 tbsp Taco seasoning mix, McCormick (store-bought or home-made)
9 cup Lettuce, romaine (oz Romaine; (chopped))
1 1/3 cup Grape tomatoes (halved)
2 avocado(s) Avocado (cubed)
1 cup Salsa, ready-to-serve (your favorite)
1/2 cup Black olives (sliced)
1 cup chopped Red bell pepper (diced)
2 cup shredded Red cabbage
1 cup Sweet white corn
1 can (13.5 oz) Artichoke hearts, canned

Instructions


  1. Heat oil in a skillet over high heat. Add ground turkey. Stir fry, breaking up the pieces with a spatula, for about 7-10 minutes, until the beef is browned and moisture has evaporated.
  2. Stir taco seasoning into the ground meat until well combined.
  3. Prep the veggies. Eat for dinner and leftovers the next day.

 

Want to go meat free? Use walnuts with taco seasoning instead. Use chopped walnuts and soak walnuts before use.
