851 gm | Chicken thighs, boneless, skinless (chopped into chunks) |
29 gm | Sausage, chorizo, pork and beef (sliced and quartered) |
2 tbsp | Ghee |
1/2 cup whole | Green olives |
2 tsp | Paprika, smoked |
1 tsp, leaves | Basil, dried |
1 tsp | Oregano, dried |
1 can(16oz) | Crushed tomatoes canned |
1 tsp | Salt and pepper |
4 tbsp | Extra virgin olive oil (for serving) |
Sauté the chicken and chorizo in half of the ghee until the chicken is cooked on all sides
Stir in the rest of the ingredients
Pour into an ovenproof casserole dish and bake in the oven for 20-25 minutes at 350°F (180°C) until the chicken is cooked through
Whilst the chicken is cooking make your side dish to accompany, whether it be cauliflower rice or sautéed parmesan spinach (links to recipes in notes below)
Serve the chicken cacciatore with 1 tbsp of olive oil drizzled over each serving
(optional) add lots of fresh chopped basil leaves to each dish
