EASY Mexican Beef Zucchini Bowl

2 medium Zucchini (organic, sliced and quartered)
681 gm Beef, ground, extra lean (organic)
2 clove(s) Garlic (minced)
341 gm Salsa, ready-to-serve (organic, chunky)
1 tbsp Chili powder
1 tsp Cumin
1 tsp Sea salt
1/2 tsp Black pepper
1/2 tsp Onion powder
1/4 tsp Red pepper flakes


Over medium heat brown ground beef with minced garlic, salt, and pepper.

Add salsa and remaining spices. Cover and simmer on low heat for another 10 minutes.

Add the zucchini. Cover and cook for about 10 more minutes until zucchini is cooked, but still firm.
If desired, serve with salad or any grains of choice. Garnish with cilantro, organic plain Greek yogurt (sour cream).
