EASY Mojo Steak Kabobs

454 gm Beef, top sirloin, lean (cut 1-inch thick)
1 tsp Black pepper
1 fruit Lime (cut into 8 wedges)
1 small Red onion (cut into 8 thin wedges)
3 cup Grape tomatoes (or cherry tomatoes)
1/4 cup Orange juice (mojo sauce - freshly squeezed)
1/4 cup Lime juice (fresh) (mojo sauce)
3 tbsp Oregano, fresh (mojo sauce - finely chopped)
3 tbsp Extra virgin olive oil (mojo sauce)
2 tbsp Parsley, fresh (mojo sauce - finely chopped)
1 tsp Cumin (mojo sauce)
1 tsp Garlic (mojo sauce - minced)
3/4 tsp Sea Salt


Whisk Mojo Sauce ingredients in small bowl. Set aside.

Pre-Heat Grill.

Cut steak into 1-1/4 inch pieces; season with pepper.

Alternately thread beef with lime and onion wedges evenly onto four 12-inch metal skewers. Thread tomatoes evenly onto four 12-inch metal skewers.

Put the kabobs on the grill.

Grill tomato kabobs, covered, about 2 to 4 minutes or until slightly softened, turning occasionally.

Grill beef kabobs, covered, 8 to 10 minutes, turning once. NOTE: Internal temperature for medium rare (145°F) to medium (160°F).

Serve kabobs over salad or grains, drizzled with sauce. ENJOY!
