Easy Roasted Carrots

Roasting veggies brings out amazing flavours and creates a great texture. Go grab a big bag of carrots and make these easy low FODMAP roasted carrots!

Ingredients


1 1/3 kg Carrots
1 tbsp Olive Oil, Extra Virgin
1 tbsp Balsamic vinegar
2 tsp, ground Thyme, dried (or herb of your choice)
1/2 tsp Salt
1/2 tsp Black pepper (freshly ground)

Instructions


  1. Preheat the oven to 425 F.
  2. Wash and scrub the carrots (you do not need to peel them if you wash them well).
  3. Chop the carrots into sticks. Toss in a large bowl with the olive oil and balsamic vinegar until evenly coated.
  4. Spread on a pan in a single layer. Sprinkle with thyme, salt, and pepper.
  5. Roast in oven for 15 minutes. Flip the carrots, and roast another 10-15 minutes more until carrots reach desired texture (cooking temperature will vary based on size of carrot sticks).
