454 gm Ground Beef, 90% lean
3 medium Carrots
1 cup Green/yellow string beans, raw
1 large stalk(s) Celery
2 tbsp Tomato paste, canned
1 1/4 cup Beef broth (stock)
1 tsp Coconut aminos, Coconut Secret
1/2 tsp Salt
1/4 tsp Thyme, dried
1/4 tsp Oregano, dried
567 gm Russet potato (3-4 medium)
1/2 tsp Salt
1/4 tsp Black pepper

Instructions


  1. Preheat your oven to 400oF (200oC).
  2. Dice the carrots and celery. Cut the green beans into 1/2 inch pieces.
  3. Wash and peel the potatoes. Cut them into 2 inch cubes.
  4. Add the potatoes to a large pot of salted water and bring to a boil until potatoes are soft. 
  5. Transfer to a large bowl, add 3/4 of the beef stock, salt and pepper. Use a potato masher or hand mixer to blend only until smooth.
  6. Meanwhile, brown the ground beef, breaking apart as it cooks, for about 3-4 minutes.
  7. Add the beans, carrot and celery and sauté together for another 2-3 minutes.
  8. Stir in the remaining beef stock, coconut aminos, tomato paste, herbs, and salt. Sauté together for another 2-3 minutes.
  9. Spread the mashed potatoes evenly on top of the mixture 
  10. Bake in the oven for 15-18 minutes or until the potatoes begin to get crispy on top.
  11. Remove from the oven and sprinkle with fresh thyme and fresh cracked black pepper. Serve!
