681 gm Beef, flank steak, boneless, lean and fat, 0mm (0") trim ((or sirloin, or ribeye *see notes))
8 small tortilla(s) Tortilla, corn ((or flour; warmed))
1/4 cup Lime juice (fresh) (fresh; (about 2 limes; juiced))
1 tbsp Olive Oil, Extra Virgin
1 clove(s) Garlic (minced)
1 tsp Cumin
2 sprig Cilantro (coriander) (marinade)
1/2 tsp Salt
1/2 tsp Black pepper
4 tbsp Pico de gallo (topping)
1/2 cup shredded Cheddar cheese, reduced fat (18%) (topping)
4 tbsp Guacamole (topping)

Instructions


  1. Add fresh lime juice, olive oil, garlic, cilantro, cumin, salt and pepper in a bowl and mix well.
  2. Pour the marinade over the flank steak and marinate for at least 1 hour. Remove the steak from the marinade and allow excess to drip off. Season with additional salt to taste.
  3. Preheat the grill or grill pan to medium-high heat. Cook about 4-5 minutes per side (125 to 130°F for medium-rare).
  4. Rest steak for about 5-7 minutes before cutting. Cut steak into ½" slices across the grain and then cut into bite-sized pieces
  5. Serve in warmed tortillas (2 / serving). Top w/pico, guac, and cheese.
