Trim crusts off bread slices and flatten using a rolling pin. Butter both sides of each piece of bread and gently press each slice into the cup of a muffin tin. Put some water in the empty tins to avoid burning.
Pop the tin into the oven for 10 mins until the bread is beginning to turn golden. Remove from oven.
Crack an egg into each little nest. Top with salt and pepper. Place the tray back in the oven for about 20 minutes. Remove from oven using a buttered knife.
