|1/4 cup, shredded||Cheddar cheese|
|1/4 cup||Egg white|
|2 medium egg||Egg|
|2 tsp||Extra virgin olive oil (divided)|
|1 clove(s)||Garlic (minced)|
|1 medium potato||Sweet potato (chopped)|
|2 slice||Whole grain bread|
|1/2 small||Yellow onion (diced)|
Heat olive oil in a frying pan. Add eggs, egg whites and cheese and scramble.
Meanwhile, boil diced sweet potato in water for 5 minutes.
Drain, and sauté sweet potato with olive oil, onion and garlic.
Serve hot with whole grain toast.
