|1 large egg||Egg (hard boiled, sliced)|

|1 dash||Salt and pepper (to taste - sea salt)|
|1 tbsp||Mayonnaise, low fat (or use vegan mayo)|
|1 bun||Sandwich bun (whole grain or sprouted)|
1. Assemble the sandwich by placing the sliced egg (see link: How to boil an egg) on the bread, then the tomato, then scallion.
2. Top with salt and pepper and spread mayonnaise on the top of the bread.
