Ingredients


1 large egg Egg (hard boiled, sliced)
1 tbsp Green onion, scallion, ramp (chopped)
1 slice Tomato
1 dash Salt and pepper (to taste - sea salt)
1 tbsp Mayonnaise, low fat (or use vegan mayo)
1 bun Sandwich bun (whole grain or sprouted)

Instructions


1. Assemble the sandwich by placing the sliced egg (see link: How to boil an egg) on the bread, then the tomato, then scallion.

2. Top with salt and pepper and spread mayonnaise on the top of the bread.
