1 cup | Frozen spinach (or fresh) |
1 cup | Salsa, ready-to-serve, low sodium, hot/medium |
1 cup shredded | Swiss cheese |

1 tsp | Paprika, sweet |
1 tbsp | Basil, fresh (or dried) |
1. Spray muffin tins with non-stick cooking spray. Preheat oven 400 degrees F.
2. In a blender, add eggs, milk, salsa, basil, spinach, cheese and oats and blend on low.
3. Pour batter into muffin tins. Top with chopped turkey bacon then sprinkle paprika.
4. Bake for 10-15 minutes depending on size of muffin tins.
