4 cup | Egg white |
1 cup | Oats, instant, dry |
1 cup | Frozen spinach (or fresh) |
1 cup | Salsa, ready-to-serve, low sodium, hot/medium |
1/2 cup shredded | Swiss cheese, low fat |

1 tsp | Paprika, sweet |
1 tbsp | Basil, fresh (or dried) |
1. Spray 2-3 muffin tins with non-stick cooking spray. Preheat oven 400 degrees F.
2. In a blender, add egg whites, salsa, basil, spinach, cheese and oats and blender on low.
3. Pour batter into muffin tins. Top with chopped turkey bacon then sprinkle paprika.
4. Bake for 10-15 minutes depending on size of muffin tins.
