Egg White Frittata

4 cup Egg white
1 cup Salsa, ready-to-serve, low sodium, hot/medium
1 tbsp Basil, fresh (or dried)
1 cup Frozen spinach (or fresh)
1 cup Oats, instant, dry
1/2 cup shredded Swiss cheese, low fat
57 gm Turkey bacon, raw
1 tsp Paprika, sweet


  1. Preheat oven 400F (204C). Spray 2-3 muffin tins with non-stick cooking spray. .
  2. In a blender, add egg whites, salsa, basil, spinach, cheese and oats and blender on low.
  3. Pour batter into muffin tins. Top with chopped turkey bacon then sprinkles of paprika.
  4. Bake for 10-15 minutes depending on the size of muffin tins.
