Eggs in Tomato Sauce

4 medium egg Egg (organic)
1/2 medium White onion (diced)
4 medium Tomato (chopped)
3 clove(s) Garlic
1 tsp Parsley, fresh
1 tsp Basil, fresh
1 pinch Sea Salt
1 dash Black pepper
1 tbsp Extra virgin olive oil


Bring a medium-sized pan to medium heat and add olive oil, onions and garlic. Sauté for a minute and then add chopped tomatoes and reduce the heat to just below medium.

Let simmer for about 3-5 minutes and then crack over eggs, salt, cracked pepper and cover. Let eggs poach in tomato sauce for 6-10 minutes or until desired consistency is reached

At the last couple minutes of cooking add freshly chopped herbs and serve.
